Marc Rouse is a Level II Court of Master Sommelier with over 22 years of experience in the food and wine business. Marc developed his culinary skills in the professional kitchen and has continued to hone his craft over the years. Restaurant Chef/Sommelier/Owner, he now runs a successful private catering business, The French 75 wine bar, Barra Pintxo pop-up restaurant, and The Crazy Wagon food truck -in the Vail Valley with clients from all over the world.
Marc stays connected with the community through a varietal of nonprofit organizations and events, the local farmers market and community garden. Marc’s passion for food and wine translates into unique, personal experiences for a wide spectrum of clients. His specialty is “healthy food for active lifestyles” and he develops customized menus based on dietary restrictions and seasonal ingredients. Marc works directly with farmers, beekeepers and ranchers for fresh local organic produce, honeys, and meats.
Nina is proudly from the East coast in New Hampshire and has lived in Colorado for 3 years. She enjoys all aspects of the up and coming culinary culture but specializes in making breads and desserts. She has enjoyed baking at unique restaurants in Colorado such as the Mountain top restaurant The 10th and Game creek in Vail. Aside from baking, Nina has a passing for painting, playing piano and hanging with George the puppy. She looks forward to bringing exciting ideas to the FOOD! By Marc restaurants and catering.
Jenny was born in Boston, Ma but grew up in New Hampshire before coming to Colorado. She spent time in Rome, Beijing and the gulf coast Fla working at upscale country clubs. Since moving to Colorado she has gained experience working at the 10th restaurant, Crespelle and as a Private Chef with FOOD! by Marc. In her spare time she enjoys reading, camping and music.
